Casju fights food loss by turning waste from African cashew farmers into delicious plant-based caramels. Did you know that the cashew nuts come from a fruit? And did you know that in most African countries these perfectly nutritious fruits are getting wasted? Casju found a way to process the cashew fruits from the farmers locally and turn them intoy into delicious food ingredients. By doing so, cashew farmer can increase income and create local jobs.

Masalawala ApS

We are small but growing food business with a team of 4 based in Copenhagen that specialises in indian food. Stared from a small foodtruck 2 years ago today we have a small restaurant and 2 foodtrucks working in and around Copenhagen. Our industry is notoriously famous for a very high food waste. Our concept is very simple, we have an almost zero waste kitchen. Our strategy is have a smaller menu, our 2 years of experience and some internal measures we take everyday which makes us an almost zero waste company.

Foodture

Foodture is an innovative food company developing plant-based, fermented products using locally sourced ingredients. Developing new plant-based products that consumers love, and that are competitive with industrially-produced meat, is a key element of the transition towards a green economy and a regenerative way of life. Foodture’s product is a version of tempeh made from locally-sourced legumes which are fermented and then prepared as blocks, cubes, patties or in a shredded version. The product is used currently mainly in food service applications, but there are many other possibilities. Several product development efforts are ongoing, including collaborations with Aarstiderne and Noma. There is a real sense of momentum in the category, with a high pace of innovation and competition. The environmental footprint of tempeh is very low compared to red and white meat, but also compared to most other meat alternatives on the market today.

Nikris ApS

Nikris offers premium, sustainable plantbased cheese alternatives for cooking in professional kitchens. Cheese is used in various meals. However, there is a need for alternatives as the carbon footprint emissions from conventional cheese is significant. Our products have low carbon footprint emissions and can replace conventional cheeses used in cooking. The characteristics of our products are: good natural taste, good functionality in cooking, have a strong nutritional profile and are free of allergens.

United Beverage

With a presence in the beverage industry since 2009, we are far from a new startup. Our extensive experience positions us as a trusted player in the market. We currently operate in two key segments of the market. In the public sector, we supply touch-free juice and beverage machines to hospitals and care homes, ensuring a seamless and hygienic experience. On the on-trade side, we cater to restaurants, cafes, and hotels, offering beverages at wholesale prices that are 40% lower than Carlsberg and Royal. Our commitment to providing quality drinks at competitive rates sets us apart. As part of our growth strategy, we are now venturing into the Copenhagen market. Red Container Coffee is embarking on a journey to revolutionise the way green coffee is traded across the world. The platform will enable the digitalisation and transparency of coffee being sold by working as a marketplace where buyers and sellers can have a more direct way of trading,communicating, and monitoring the supply and demand of coffee available on spot, The objective is to unite importers inventory and facilitate coffee trade for small to medium size coffee roasters. Provargo A/S

Provargo A/S er markedsførende indenfor drikkevarekontrol. Vi udvikler, producerer og leverer online baserede doserings og kontrolsystemer til hospitality branchen, med et væld af kunder i både Danmark og resten af verden. Vi gennemgår i øjeblikket en spændende fase i vores udvikling som virksomhed, med et større fokus rettet mod bar,-, hotel-, og restaurationskæder. Samtidig arbejder vi også tæt sammen med distributører på markedet. I bar og restaurationsbranchen er det almindeligt at se relativt høje spildprocenter på drikkevarer. Det resulterer i to problemstillinger: 1) Et stort tab af omsætning. 2) Manglende overblik over reel lagerbeholdning af eksempelvis fustager, flasker, post-mix beholdere, osv. Derfor har vi udviklet systemer der synliggør på et online dashboard, nøjagtigt hvad der tappes af såvel spiritus, som øl, vin og sodavand. Alle tappedata registreres med tidsstempler og er i stand til at give brugeren et overblik over forbrugsmønstre, lagerniveauer, spidsbelastninger af personale, faktisk forbrug af drikkevarerne der tilbydes, m.v. Vores kerneprodukt er i stand til at integrere med cloud-baserede POS systemer, hvilket gør det muligt for udvalgte personer (eksempelvis ejere eller lokale driftschefer) at overvåge balanceforholdet imellem salg og faktiske udskænkninger. Herudover tilbyder vi også øvrige løsninger der sikrer at kvaliteten af drikkevarerne er i top, eksempelvis ved temperaturkontrol og køler overvågning. Da vi er en virksomhed der selv udvikler og producerer alle vore løsninger fra bunden, inklusiv vores cloud, har vi også stor fokus på løbende at optimere og forbedre alle elementer. The idea started in 2018, where the two friends met in one of the finest Danish Michelin restaurants. With a common passion for Gastronomi they agreed to go against the expected and create Rebæl. Rebæl is a unique art poured into bottles and only created from the best fresh ingredients from nature. We stay away from additives and artificial aromas. Only pure, natural flavors are welcome.

Connecting Grounds ApS

Connecting Grounds is a food start-up based in Aarhus that up-cycles spent coffee grounds (a.k.a. coffee waste) into a food ingredient for B2B snack and confectionary companies and restaurants. Why do we do it? 1. Environment Spent coffee grounds are often treated as waste. Think about how many cups of coffee you or the people around you drink per day. All the coffee waste from drinking coffee adds to the Greenhouse Gas Emissions. 2. Nutritional Value When we brew our cup of coffee, we are only taking advantage of 1% of coffee's nutrients. 99% of these nutrients stay in the spent coffee grounds. These nutrients include caffeine, dietary fibre, proteins and valuable minerals. What we do is change the narrative behind hidden food waste by starting with coffee by-products. By up-cycling such a product, we evert emissions, take advantage of our resources and raise awareness on the importance of up-cycling. Rethinking food is what we do, and we will not stop with coffee by-products. We will continue to search for resources/ingredients that have the potential of being reintroduced in the food stream, again.

Sustainable bio industries are suffering from inefficient resource usage and low productivity due to lack of data and insights, which is a major barrier to the green transition.
