Folk Kombucha

Are you ready to join a journey of fermentation with Folk Kombucha? Behind the name Folk lies a vision of creating something that brings people together. Located in the heart of Kødbyen, our small but passionate team is dedicated to crafting uncompromising, living kombucha. We've built a brewery universe from the ground up in the heart of the city, in a space where people can gather and learn about unpasteurized kombucha on a larger scale, while we continue learning ourselves. That’s also why every aspect of Folk is done in-house - from fermenting, bottling, and lab testing, to designing our own labels and visuals. Rather than outsourcing, we are becoming experts in our craft, evolving every day and continually refining our understanding of how to ferment the best possible kombucha. It's a process that only improves with the experience we gain. We use only organic ingredients with flavors inspired from what grows in the Nordic nature around us and let alchemy meet science. Each bottle undergoes a weeks fermentation process, making us a true slow drink in both the soft drink and non-alcoholic segments. We combine flavor, tradition, and health in a product where no detail is overlooked. When you step through the doors of our brewery, you're joining a team of passion. We are driven to build a remarkable brand by thinking, creating, and executing at an ambitious level. As a cooperative workplace, we carry an open and dialogue-based management style, where everyone lends a hand and is part of an informal environment. We are a very small team and therefore need someone to join, that is ready to set the bar very high and take pride in executing at the level we uphold at Folk.

Bemakers

About Bemakers Bemakers is building the leading global platform for direct beverage distribution to help Makers of alcoholic beverages (e.g. beer, wine, and spirits) sell directly to their customers across borders. The company was founded in May 2021 and has raised EUR 1 million in pre-seed funding to build the platform and establish Bemakers as the innovator and challenger within the global beverage distribution category. Bemakers is founded by a core team with a strong track record in building and scaling platform businesses within relevant industries. The team is backed by a group of business angels with experience from leading technology startups/growth companies, venture capital firms as well as the alcoholic beverages industry.

The Pie Project

The Pie Project is a Mediterranean micro-bakery located in the heart of Odense. Our principal is to make homemade, motherly food. Homemade, handmade, heartmade pies for all the pastry lovers. We are a small team who love baking and pies! Our goal is to find more pie lovers and small business enthusiasts to follow the dream with us. Our moto to Stay HapPie. Nature Preserve is a sustainability-centered tech startup. We are on a mission to make the food system more transparent and climate-conscious. We believe sustainability should be driven by data. Our primary focus is a web-based SaaS life cycle assessment solution. We help food companies to measure, reduce and communicate the emissions of food products.

AERIS

Aeris is a Copenhagen based bottled cocktail brand, handcrafted to the highest of standards. The concept is simple: everybody should be able to enjoy a high quality, perfectly balanced cocktail, regardless of their skillset or financial status. More often than not, a really well balanced cocktail, made with high quality ingredients, is only really accessible in high end restaurants, hotels and bars. For those with the financial means to enjoy cocktails in these places, Aeris cocktails is simply a really nice supplement when one wants to have an equally good tasting drink at home (the importance of this rose during the pandemic and lockdown). For those with less deep pockets, Aeris is simply put some bottled luxury for a decent price. Our recipes are an echo from Barcelona where our founders started their journey, and every cocktail is handcrafted and bottled to the highest of standards. The essence of Aeris is all about wanting to step out of the box, do something that feels fresh and exciting, a new concept embracing that amazing Copenhagen vibe. Our brand oozes of luxury, and yet, is very affordable, for anybody who wants some atmosphere at any place, at any time. Sustainability and quality is key for us and so we have a zero plastic policy and refill options to ensure our bottles get reused. The founders are currently trying to find the time to keep up with the growth and demand, and are in need of a cool team of people to help in the journey of taking Aeris out into the rest of the world.

Copenhagen Sparkling Tea Company

SPARKLING TEA is a brand-new beverage category. The combination of Nordic innovation and Asian tea traditions, results in an organic low/non-alcoholic sparkling drink based on a careful selection of teas. THE COMPANY was founded in 2017 in Copenhagen, Denmark, and introduced to the market in May the same year, by the award-winning sommelier, Jacob Kocemba, and his business partner, Bo Sten Hansen. Copenhagen Sparkling Tea is now sold and served in +30 countries and served at +50 Michelin restaurants worldwide. OUR DREAM is to produce the world’s best low/non-alcoholic sparkling beverages, which can lift any gourmet or festive occasion. Why? ...because everyone deserves a good glass of bubbles!

Zymoscope ApS

Zymoscope enables food processors to monitor and control fermentation easily, remotely, and in real-time. We develop a fermentation management platform, consisting of proprietary sensor technology, sophisticated algorithms, and a mobile app. Currently, our focus is to provide a robust platform for anaerobic fermentation, and more specifically the beer industry. We have been developing our solution together with leading breweries, and we have been conducting industrial pilots since May 2020. Breweries have been able to automate quality control, increase production capacity and be able to create innovative and flavorful products in an efficient and consistent way. Although fermentation is the most ancient food processing technique, it now presents a great potential to fundamentally change the way the world eats, and improve global human and environmental health and economy. GRØD

GRØD is a café and restaurant concept that opened in Nørrebro, Copenhagen in 2011, with a nerdy focus on everything related to "grød", including porridge, smoothie bowls, daal, congee, risotto and bowls. Most countries have a unique "porridge"-culture that explores different ingredients, grains and spices. And when it's made right, it tastes absolutely fantastic – and it’s naturally healthy and sustainable. We also highly value community among our colleagues and our guests, and love working with people who understand that their energy has a big impact on their surroundings. GRØD has restaurants in Copenhagen, Aarhus and Oslo, as well as a series of retail products available in the most major supermarket brands.

FÆRM

FÆRM has developed and patented FÆRM Original - a fermented, plant-based cream cheese built for professional kitchens. FÆRM Original is made from few, organic ingredients and produced using dairy-inspired methods, FÆRM Original has 11% protein, clean label ingredients, and it’s sold at the same price as dairy cream cheese. We built the product around functionality and performance and FÆRM Original behaves like dairy cream cheese in both hot and cold applications. That’s also why it’s relevant across restaurants, hospitals, canteens, cafés, catering, and bakeries across Denmark. We’ve sold-out our pilot production since October 2025 and have recurring demand across multiple foodservice sectors. FÆRM is now entering the next phase with focus on scaling with industrial production and expanding commercially. FÆRM’s ambition is to make plant-based cream cheese the obvious choice. FÆRM Original combines functionality, high protein content, and clean ingredients in a product designed for real kitchen performance.

Damn Good Coffee Company

At Damn Good Coffee Company, we’re on a mission to change the coffee industry. The waste from coffee consumption is a major contributor to the trillion ton CO2 problem from the food and beverage category. We are creating a sustainable system that makes it easy to turn coffee net zero at scale. We have successfully turned many thousand coffee users climate-neutral, but we are only getting started, obsessed with the impact we can make for the many.

ReBite

At ReBite, we’re developing a protein bar that makes it easier to choose something truly healthy. Many people are looking for snacks that are simple, natural, and actually good for them. But most protein bars on the market today are highly processed and don’t live up to that. Most current protein bars: - Have long and confusing ingredient lists - Contain artificial sweeteners, additives, and protein isolates - Are high in protein, but offer very little fibre or real food ingredients - Don’t leave people feeling like they’ve eaten something healthy ReBite is different. Our bar is: - Made with whole, natural ingredients - 45% made from upcycled side-streams from the food industry in Copenhagen - Free from sweeteners, preservatives, and other additives - Made without protein isolates—only protein from original raw ingredients - High in fibre (10g) and with only 8g sugar from natural sources ReBite is a cleaner, more honest alternative for people who want a snack that’s better for both their body and the planet.
