About Folk Kombucha
Folk Kombucha is a young start-up microbrewery in Copenhagen’s Meatpacking District, built to change the kombucha market and perfect the art of fermentation without compromises. We brew, ferment, lab test, and bottle in-house to craft unpasteurized, living kombucha using organic, high-grade ingredients and Nordic-rooted flavors. We also create all visuals ourselves and host events, tours, and tastings to share our craft. We’re a very small team of just four people, working cooperatively with an open, dialogue-based culture, and we set the bar high.
We wanted to build something not only in a jar on a counter, but at scale. That means in-house lab, precise temperature control, and using tech only where it helps. The result is wild-fermented, raw kombucha that’s still living in the bottle. When technology and nature stop competing and start collaborating, flavor deepens, complexity grows, and a living culture does what we cannot do alone. Difficult? Yes. But innovation lives where nature and technology work together.
Role context
You’ll be one of two people in production, both running and leading production day-to-day alongside our brewer. We’ve had the pleasure of working with our lead brewer for the past years who you will step into the shoes of. You will take the lead in practice while being hands-on in production. We expect you to keep a helicopter perspective on planning, quality, and flow, while executing on the floor. You are comfortable leading, taking charge of tasks, and actively solving issues. You have strong technical and service understanding and can troubleshoot ongoing equipment issues is key to keep the brewery running.
Job description
As the Lead Brewer at Folk Kombucha, you’ll be a key part of production during our growth stage, working closely with our other brewer. The role requires problem-solving, initiative, and a positive, upbeat attitude. It also demands exceptional structure and focus, ensuring every part of production, planning, fermentation, checks, bottling, CIP, warehousing, documentation, runs to a consistently high standard. You take ownership of schedules and SOPs, keep accurate records in our ERP, spot issues early, and drive continuous improvement while maintaining a clean, safe, audit-ready brewery. We’re looking for someone who wants to build a long-term relationship with the company and lead by example on the floor.
Essential duties & responsibilities
Day-to-day brewery production: fermentation management, process control, basic micro/lab checks, bottling, CIP, packing orders, and maintaining standards
Create and follow the production schedule; monitor ingredient inventories
Manage stock of raw materials and finished goods; handle order fulfilment (trade and retail), warehousing, and accurate record-keeping
Run safe, efficient operations: comply with food safety and GMP, complete required forms, report production activities, coordinate logistics, and communicate effectively with colleagues
Keep the brewhouse clean, organized, and audit-ready
Participate in and represent Folk Kombucha at festivals when needed
Register and handle incoming orders
Document all activities in the ERP system
Create production overviews and planning documents
Attend weekly meetings with the owner; contribute proactively to continuous improvement
Knowledge, skills & abilities
3+ years’ experience in commercial brewing or a relevant technical background with solid technical ingenuity
Ability to follow SOPs and uphold high quality standards for a live, unpasteurized beverage
Comfortable working with hot/cold processes and hazardous equipment/materials
Physically fit: frequent lifting, constant standing, and walking
Strong multitasking and time-management skills; calm and flexible under pressure
Highly organized, structured, and detail-oriented
Comfortable leading, taking ownership, and actively solving issues
Strong technical and service mindset; able to troubleshoot equipment ongoing
Clear communicator who helps keep the day and week on track
Fluent English
Computer literacy (Word, Excel, etc.)
