Food waste is a 1.6-billion-ton problem that is estimated to account for 8-10% of global greenhouse gas emissions. We founded FoodOp in 2020 with the mission of combatting food waste in commercial kitchens. However, it quickly turned out that food waste was a symptom of an analog ecosystem with great potential to improve the environmental footprint, productivity, and quality of food servings. Therefore, we have ended up building a digital platform that helps professional kitchens reduce Co2 and admin workload. We do so through a menu planning module, a display module, and an ESG reporting module where kitchens can manage Co2, organic produce, nutrition, and food waste. The menu planning and ESG reporting modules are powered by AI and an automated data collection methodology that enables more sustainable, profitable, and enjoyable food service.

With today's advances in rocket technology, the demand for accessible launch sites increases as the demand for satellites in orbit does as well. EuroSpaceport wants to offer an off-shore solution based on retired wind turbine equipment to provide Launch Service Providers (i.e. the companies with rockets) with an accessible and cheap launch range. Currently, we are looking to the North Sea as it has a geographically favorable position when it comes to launching Earth observation satellites and communication satellites. We are engaged with relevant off-shore partners in Esbjerg, and we already have the first demonstration launches planned for 2022. Europe is currently seeing a modern space race in order to retain space launch capabilities, which the American market has been winning over the past 15 years. We are on track to become a cornerstone in the launch infrastructure of Europe. We will be using Esbjerg as our operative hub, but we work out of Copenhagen.

At mellōw we strive to raise the bar on chocolate. We produce high-end single-origin chocolate following the bean-to-bar principles. All processing of cacao beans into chocolate is done by hand. We source raw cacao beans from small local farmers from across the world and craft the chocolate at our craft shop in Copenhagen, Denmark. We make chocolate from carefully selected cocoa beans from some of the world's unique cocoa origins. We buy exclusively from farmers who grow their cocoa beans under 100% ethical and sustainable conditions.
