Foodture’s product is a version of tempeh made from locally-sourced legumes which are fermented and then prepared as blocks, cubes, patties or in a shredded version. The product is used currently mainly in food service applications, but there are many other possibilities. Several product development efforts are ongoing, including collaborations with Aarstiderne and Noma. There is a real sense of momentum in the category, with a high pace of innovation and competition. The environmental footprint of tempeh is very low compared to red and white meat, but also compared to most other meat alternatives on the market today.
