Nordic Koji is a food production company specialising in the production of natural flavor enhancers through advanced fermentation techniques. Our goal is to make koji-based products (miso, shio, shoyu) a kitchen staple, so that we:
Reduce the need for additive-rich bouillon cubes, artificial stocks, salt and sugar in cooking
Naturally add umami to plant-based dishes

In this attractive and hip career opportunity you’ll be responsible for various tasks related to plant production and the delivery of innovative umami ingredients to the European markets.
We require candidates with experience in food production and a background in food-related studies.
Assist in the production of gastronomic mold (koji) using Nordic substrates
Conduct research, test new food processing solutions, and implement them
Follow HACCP and hygiene protocols diligently
Meet production milestones and ensure high efficiency throughout the process
Maintain the exceptional quality of the final product
Collaborate closely with the Head of Production
Report to the Plant Production Manager
Ability to think critically and work independently
Documented experience in food processing
Educational background in food-related studies/culinary school
Ability to think creatively and maintain production goals
Ability to work independently and with the team
Fluent English (written and spoken)
Location Copenhagen area
Ability to translate products into common food applications
Experience in solid-state fermentation
Experience in gastronomic mold development
Experience in planning and maintaining production system (software)
Driving licence cat. B
Note: This position requires a workload of 20-25 hours per week. There is potential for extending the contract into a full-time position.
